Tips

  • Do note that by consuming raw eggs, as in this recipe, there is a risk of contracting Salmonella. However, if you use high quality eggs produced according to proper safety practices, this risk can be reduced to almost nothing.
  • As I live in the UK, this means that I will make sure eggs I use are fresh and are imprinted by the red Lion Quality Mark. This demonstrates that they have been produced according to British Egg Safety procedures.
  • In 2004, a survey by the Food Standards Agency found no salmonella in 28,000 (red Lion Quality Marked) British eggs tested.
