This stuff is super strong and really delicious, like you liquefied gingerbread rather than the rather different store-bought taste. I used tonic water since the chop was somehow out of sparkling water. I think I'm in love. Ginger is supposed to be good for you, too, and gingerale from the store doesn't have any ginger in it.
The cookbook is Vegetarian Times Fast and Easy, and while I suppose I am violating copyright by putting this here you should all go buy the cookbook too because it is, indeed, fast, easy, delicious foods. Okay vegetarian times? Please don't sue me now.
Ingredients
- 2c light brown sugar
- 8 oz fresh ginger, peeled and cut into 1/4 inch thick coins
- 1 cinnamon stick
- pinch cayenne (i don't have any and left it out)
- ice cubes
- 3 quarts sparkling water
Directions
- Bring sugar, ginger, cinnamon and 2 cups of water to a boil in large saucepan. Simmer five minutes, remove from heat, let cool.
- Strain syrup into small pitcher, and discard ginger and cinnamon. Cover and refrigerate until ready to use.
- To serve, ladle 1/4 cup ginger syrup into tumbler filled with ice. Top with 3/4 cup sparkling water, and stir.
