Recipe from Vegan With A Vengance, with a few modifications by Nicole (silken tofu and maple syrup).
Ingredients
- 1 cup margarine (I like Earth Balance)
- 1 1/4 cups sugar
- 1 tablespoon molasses
- 2 teaspoons vanilla
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups semisweet chocolate chips
- 1/4 cup silken tofu, whizzed in the blender or food processor
- 2-3 tablespoons maple syrup
Directions
- Preheat oven to 350F
- Cream margarine & sugar till fluffy. Add molasses and vanilla. Add tofu. Add flour, soda, salt. Mix well. Fold in chocolate chips. Add syrup till dough sticks together properly.
- Drop teaspoonfuls spaced a little over 2 inches apart on ungreased cookie sheets. Bake 8-10 minutes until slightly browned. Let cool on sheets for 5-8 minutes, then transfer to cooling rack.
Tips
- 1st time: These came out delicious, but really flat. I would maybe add a bit more flour (to compensate for the additional liquid in the tofu) and maybe more baking soda? Need to test more.
- 2nd time: added 1/3 cup wheat flour and 1/2 cup oats, blenderized till like flour (1/2 cup before whizzing, not after). Dough was too dry so I tried to compensate by adding a bit more shortening and a bit more silken tofu. Cookies had the opposite problem from last time: didn't flatten out enough, and were a bit too dry. Took forever to cook, too. Needed a higher ratio of butter to flour. Next time, perhaps just add 1/3-1/2 cup blenderized oats, no extra flour?
