Directions

  • Sift together the flour, the baking powder, the baking soda, and the salt.
  • Sifting the dry ingredients beforehand is essential for FLUFFINESS.
  • I sifted the ingredients directly in to my handy Kitchen Aid mixing bowl.
  • Add the butter, and blend the mixture on medium speed until it resembles coarse meal.
  • Stir in the Cheddar, add the creme fraiche, and stir the mixture until it just forms a soft dough.
  • Knead the dough gently 6 times on a lightly floured surface.
  • Roll the dough in to 2-3 inch balls (there should be six), place on cookie sheet.
  • Press down on balls (shush) with palms to flatten. They will make pleasing rustic looking rounds.
  • Bake the rounds on an ungreased baking sheet in the middle of a preheated 425°F. oven for 15 to 17 minutes, or until they are golden. They will look a lot like scones.
  • Serve with your infamous chili that literally make your eyelids sweat. Holy shit.
  • Give leftover biscuits to neighbors. Rejoice!
