Ingredients
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons cold unsalted butter, cut into bits
- 1 1/2 cups extra sharp Cheddar, grated coarse
- 1 small container (7.5 oz) creme fraiche
Directions
- Sift together the flour, the baking powder, the baking soda, and the salt.
- Sifting the dry ingredients beforehand is essential for FLUFFINESS.
- I sifted the ingredients directly in to my handy Kitchen Aid mixing bowl.
- Add the butter, and blend the mixture on medium speed until it resembles coarse meal.
- Stir in the Cheddar, add the creme fraiche, and stir the mixture until it just forms a soft dough.
- Knead the dough gently 6 times on a lightly floured surface.
- Roll the dough in to 2-3 inch balls (there should be six), place on cookie sheet.
- Press down on balls (shush) with palms to flatten. They will make pleasing rustic looking rounds.
- Bake the rounds on an ungreased baking sheet in the middle of a preheated 425°F. oven for 15 to 17 minutes, or until they are golden. They will look a lot like scones.
- Serve with your infamous chili that literally make your eyelids sweat. Holy shit.
- Give leftover biscuits to neighbors. Rejoice!
