A family tradition. So delicious! And magical. No one would ever guess how these are made.
Ingredients
- one 6 oz package semi-sweet chocolate chips
- 3 tablespoons light corn syrup
- 1/2 cup rum (i use light rum. the recipe also says you can use bourbon or coffee but i've never had them made that way.)
- 2 1/2 cups crushed vanilla wafers (hint: a 12 oz box of nilla wafers makes about 3 cups crushed.)
- 1/2 cup powdered sugar
- 1 cup (finely) chopped nuts (i always use walnuts)
Directions
- crush nilla wafers by putting them in a ziploc bag and squishing them with a rolling pin.
- chop nuts.
- mix nuts, powdered sugar, and nilla wafers in a large-ish bowl.
- melt chocolate chips and corn syrup in a double boiler.
- pour melted chocolate mix over the wafers/nuts/sugar mix.
- add rum.
- mix till it's homogenous (except the nuts, of course). i find it's easiest to use my hands to mix it. at first it won't seem like there's enough fluid, but there is, trust me.
- here's where the magic happens: let the mix stand for at least 30 minutes. i don't know how it works, but this allows it to set and somehow the nilla wafer crumbs become incorporated with the chocolate and the alcohol.
- come back and roll the dough/batter into smallish balls, and then coat them in powdered sugar.
- store in airtight container.
- munch.
