Ingredients
- butter, soy sauce, lemongrass-ginger oil, fresh orange juice, worcestershire sauce, rice vinegar
- 1 lemon, 1 lime
- emeril's original spice
- 3 tbs coarsely minced ginger, garlic, cipollini onions
- yellow summer squash, carrot, jicama, fresh mixed bean sprouts, fresh chives
- 1 box of casbah rice pilaf
- 2 chicken breasts
Directions
- lice chicken into bite-sized pieces. marinate in mix of soy sauce, lime juice, lemongrass-ginger oil, orange juice, worcestershire sauce, rice vinegar & spices.
- start rice pilaf.
- next, saute ginger, garlic, onion & carrot in a mix of butter and lemongrass-ginger oil. when onions are translucent, add chopped squash, carrot and jicama. eventually add chicken and marinade sauce. cook under extremely low heat.
- when your fowl is perfectly tender and ready to go, spoon pilaf onto plates. add chicken, vegetables & chopped chives. garnish with a side of lemon. enjoy!
