My mom's been making these for as long as I can remember. They're delicious, with their gooey tart lemon filling and buttery shortbread crust.
Ingredients
- 2 1/4 cups flour
- 1/2 cup powdered sugar
- 1 cup butter
- 4 eggs
- 2 cups granulated sugar
- 1/3 cup lemon juice
- 1/2 teaspoon baking powder
Directions
- Sift 2 cups of the flour and the powdered sugar together. Cut in butter. Blend. Pat in 9"x13" pan (it will be crumbly and not very cohesive). Prick. Bake at 350F for 20-25 minutes
- Beat eggs, granulated sugar, and lemon juice together. Sift 1/4 cup flour and 1/2 teaspoon baking powder together and add to the egg mix. Pour egg mix over the baked crust. Bake again at 350F for 25 minutes.
- Sprinkle top with powdered sugar.
- Let cool before removing from pan.
