Got this recipe from the Something Awful Goons With Spoons forum.

  • Proof yeast by mixing it with 1/4 cup warm (but not too hot) water, 1 teaspoon sugar. Let it rest for 10 minutes. If it hasn't gotten foamy and risen a little, throw it out and use different yeast (repeat the proofing process on it).
  • Mix flour, salt. Add water, yeast. Mix.
  • Turn out dough onto a floured surface (or put in a mixer). Knead until done (do the windowpane test -- if you can stretch it out enough to make the dough translucent enough to see light through it, it's done).
  • Let ride till doubled in an oiled bowl (covered with damp towel in a warm place). ~90 minutes.
  • Punch down.
  • Put into loaf pan or arrange freeform on a cookie sheet. Let rise again till doubled.
  • Cook for 40 minutes in a 375F oven, or till done.
