This is the recipe my mom uses to make these cookies every Christmas. Good stuff. We always called them "snowballs" but other common names for them are "Mexican Wedding Cakes" and "Russian Teacakes".
Ingredients
- 1 cup butter, softened
- 3/4 cup powdered sugar (this is the only measurement I don't remember exactly, but 1/2-3/4 is what the internet says)
- 1 t vanilla
- 2 1/4 cups flour (the dough was VERY dry though, so I might knock this down to 2 cups next time)
- 1/4 teaspoon salt
- 3/4 cups finely chopped nuts (I used pecans)
Directions
- Preheat oven to 400F
- Mix butter, powdered sugar, and vanilla thoroughly. Add flour and salt, mix thoroughly. Add nuts and mix. Cook for 10-12 minutes, till the cookies are set but not browned. Roll in powdered sugar once while they're still warm, and again when they're cooled.
