adapted from a good old oklahoma recipe from mike's stepmother, written down for us by mike's austrian dad, then adapted by us for our kitchen...........so, uhhhhh, bear with me, okay? ;)
Directions
- preheat oven to 350 degrees, lightly wipe muffin pan with vegetable oil or butter. cook bacon thoroughly, crumble or slice with a knife until they are in small, small pieces. combine dry ingredients [masa, flour, baking powder, salt] in a bowl. in separate bowl, whisk eggs and milk together. add wet mixture to dry mixture slowly, continue to add milk [if needed] until dough has reached a soft, workable consistency [not too much milk--should be more dough-like than batter-like, really]. chop onion and jalapeno, fold into dough along with bacon bits. add pepper to taste. fill muffin cups with dough [fill about 3/4 full to all-the-way full, makes 12 muffins]. bake in 350 degree oven until golden brown and slightly crusty on top [took about 25 minutes, your oven may vary]. eat hot, with a tall glass of lemonade! :)
