Ingredients

  • 2 C. silk soymilk creamer
  • 1/2 C. sugar
  • 2-3 tsps. vanilla (or other flavoring depending on what type you're making)
  • 2 T. soy cream cheeze (tofutti is the best)
  • 1/4 tsp. xanthan gum powder (expensive, but useful and one bag lasts forever)
  • flavorings of your choice (fruit, chocolate, nuts etc.)

Directions

  • put all ingredients in blender or food processor and blend until creamy. some ingredients that you don't want blended all the way you can put in after you blend the rest.
  • then put in icecream maker.
  • there is an alternative one that uses coconut milk instead of the creamer.. but i find that all coconut milk is a little too rich.. i've played with half of each and that works pretty well. especially for a coconut almond icecream.. where you add shredded coconut and almond slivers and almond extract..

Tips

  • i found the original recipe on a recipe site, but i've changed it up a bit.. i used to add about 1/2 c. silken tofu, but i found that it doesn't seem to need it.. there was also a version to add mashed bananas.. but i found i didn't want everything to have a bananay flavor. my only complaint about this icecream is that if you leave it in the freezer for a while it gets fairly hard. but unless i make a lot of it at once, it's not usually a problem because it's so tasty, that it all gets eaten right away!
