Lightly brown a tube of cheapass Jimmy Dean sausage. If your dad happened to buy the lean version, add a little jalapeno olive oil to keep it from sticking everywhere.
Remove sausage to a bowl, but keep the grease/oil in the pan. Add a little butter to make about 2 Tbsp of fat.
Add a small chopped onion, 2 Tbsp of flour, and some ground cumin (I used 1 Tbsp because I love the stuff); cook over medium heat for a few minutes, stirring occasionally, until the flour and onions brown.
Add 2 cups of milk, stir and scrape to pick up the browned bits in the pan, add the sausage.
Bring to a simmer, then turn heat down to low and let it cook for at least 5 minutes (stirring occasionally), or until it starts to thicken.
